Summertime is upon us and many of you are starting up your barbecues to celebrate this wonderful season! Longer days and warm nights make grilling and outdoor dining a must. Here is a light and tasty veggie burger with the main ingredients being rice and lentils. It won’t weigh you down (and keep you down) like a beef burger will! These lentil burgers are high in protein, low in fat, contain complex carbohydrates and just taste good and healthy. Add on more veggies… sliced avocado, sliced tomato, sliced onions and serve in a “lettuce bun”.
So keep you body feeling great this summer and choose to eat more plants!
Recipe:
1 cup uncooked lentils
1 cup uncooked brown rice
4 cups water
1 ½ cups rolled oats (GF or regular)
1 ½ cups grated carrot
1 small onion, grated finely
1 teaspoon cumin
½ teaspoon garlic powder
¾ teaspoon salt
¼ teaspoon red chili flakes (optional)
Directions:
In a saucepan, combine water, lentils and rice. Bring to a boil, reduce heat and simmer for about 45 minutes or until water is absorbed (or cook rice and lentils with water in a rice cooker). Remove from heat and allow to cool.
Add remaining ingredients to rice and lentil mixture. Mix well and shape into patties. If barbecuing, refrigerate patties for 1 hour. Grill about 6 minutes per side. Or cook in a pan over medium heat, 6 minutes per side. Serve with avocado, tomato and onion in a lettuce bun. Enjoy and happy summer!
