Quinoa has been called the “grain of the gods” due to it’s high protein, fiber, and vitamin content. We love that it provides 7 grams of complete protein per serving! Also, our 2 year old daughter loves this dish! She devours the sweet potatoes and the quinoa but will only eat just a few small bites of the kale. She is getting more familiar with it and watches her parents eating it and enjoying it. It is definitely child tested and approved!
Recipe:
1 cup quinoa
2 cups water
pinch of sea salt
2 tablespoons extra virgin olive oil
2 sweet potatoes, peeled and cut into ¾ inch pieces
2 cloves garlic, minced
1 bunch of kale, steamed
¾ cup white wine, or apple juice
¾ teaspoon salt
¼ teaspoon pepper
Directions:
Rinse quinoa in a fine mesh strainer with warm water. Add rinsed quinoa to a small saucepan, add water and a dash of salt. Bring to boil, reduce heat to low. Cover and let simmer for 12-15 minutes. Remove from heat. Fluff with a fork, cover and let stand for 15 minutes.
In a large stock pot, heat oil over medium heat. Add sweet potatoes and cook for 5-6 minutes, stirring occasionally. Add garlic and cook for 1 minute, stir. Add kale, white wine, salt and pepper. Cover and cook for 10-12 minutes, tossing often.
Serve the sweet potato and kale mixture over quinoa.
