Sweet Potatoes and Kale served over Quinoa

Curious how you can enjoy more superfoods easily? Here is a delicious recipe that will give you three nutrient rich superfoods in one meal without costing you your wallet. Quinoa has been called the “grain of the gods” due to it’s high protein, fiber, and vitamin content. We love that it provides 7 grams of complete protein per serving! Kale and sweet potatoes are also loaded with fiber, vitamin A, vitamin C, calcium, iron and other minerals and antioxidants. Your body will thank you after eating this nutrient rich meal. Health aside, we estimate this entire meal costs less than $5 dollars to make!

Also, our 2 year old daughter loves this dish! She devours the sweet potatoes and the quinoa but will only eat just a few small bites of the kale. She is getting more familiar with it and watches her parents eating it and enjoying it. It is definitely child tested and approved!

1 cup quinoa
2 cups water
pinch of sea salt
2 tablespoons extra virgin olive oil
2 sweet potatoes, peeled and cut into ¾ inch pieces
2 cloves garlic, minced
1 bunch of kale, steamed
¾ cup white wine, or apple juice
¾ teaspoon salt
¼ teaspoon pepper

Rinse quinoa in a fine mesh strainer with warm water. Add rinsed quinoa to a small saucepan, add water and a dash of salt. Bring to boil, reduce heat to low. Cover and let simmer for 12-15 minutes. Remove from heat. Fluff with a fork, cover and let stand for 15 minutes.

In a large stock pot, heat oil over medium heat. Add sweet potatoes and cook for 5-6 minutes, stirring occasionally. Add garlic and cook for 1 minute, stir. Add kale, white wine, salt and pepper. Cover and cook for 10-12 minutes, tossing often.

Serve the sweet potato and kale mixture over quinoa.
