Not many salads can boast similar health qualities with such a great and fresh flavor. This dish is packed with protein, fiber, and healthy fats making it great for lunches or side dishes. It will keep your body satisfied, supply you with energy and won’t weigh you down. We like taking this salad to potlucks or barbecues to add a healthy option for others to enjoy.
Recipe:
2 cups quinoa
3 ½ cups water
pinch of sea salt
1 cup fresh cilantro, chopped
5 green onions, sliced
1 jalapeno pepper, seeded and finely diced
1 red pepper, diced
2 cups cooked black beans, rinsed and drained
1 avocado, peeled and sliced for garnish
Dressing
¼ cup extra virgin olive oil
½ cup freshly squeezed lemon or lime juice
1 teaspoon ground cumin
1 ½ teaspoon sea salt
Directions:
Rinse quinoa in a fine mesh strainer with warm water. Add rinsed quinoa to medium pot with water and sea salt. Bring to boil, reduce heat to low. Cover and let simmer 20 minutes or until water is absorbed. Remove from heat.
Place quinoa in a large bowl to cool. Combine oil, juice, salt and cumin in a small bowl. Whisk and pour over cooled quinoa. Toss well. Add cilantro, green onions, jalapeño, red pepper and black beans. Toss.
Garnish with avocado slices and serve.
