I like to make these for guests, road trips, parties or for when time is too short to make anything more complicated. They are sweet enough so that anyone can enjoy them. They pack well in lunches and will be a bit of excitement in your lunch bag.
Recipe:
2 cups granulated sugar
1/2 cup cocoa powders
1/2 cup earth balance
1/2 cup non-dairy milk (rice, soy, or almond)
1 teaspoon vanilla
1/2 cup peanut butter
4-5 cups of old fashioned oats
Directions:
1. In a saucepan bring sugar, cocoa, butter and milk to a boil. Boil for 1 minute.
2. Remove pan from heat. Add vanilla, peanut butter and 4 cups oats. Add more oats as needed to make a more firm consistency.
3. Drop by teaspoonful or shape into pin pong ball sized balls and place on wax paper. Allow to cool. Cookies will keep in an airtight container for 1 week.
