This simple cookie will win your heart and tummy with it’s lovely balance of health and sweetness. It’s an incredibly simple and quick recipe, a huge plus for a busy mom! The oats in this recipe provide a good source of protein, iron and fiber which helps to lower LDL (bad) cholesterol and raise HDL (good) cholesterol levels. Oats are not a gluten free food since traces of gluten can still be found. If you want gluten free oats and want a good deal on price, try Bob’s Red Mill GF Rolled Oats on Amazon.com.
I like to make these for guests, road trips, parties or for when time is too short to make anything more complicated. They are sweet enough so that anyone can enjoy them. They pack well in lunches and will be a bit of excitement in your lunch bag.
