Meatless Mexican Mushrooms “Mmm”


The other day we received an excellent recipe from a very talented family member, who would like to remain anonymous. She had some portobello mushrooms begging to be cooked and so she decided to fix them up Mexican style. The result of her concoction was terrific! Here is her delicious recipe:

Recipe:
4 portobello mushrooms (or use any variety of mushroom)
1 red or yellow pepper, thinly sliced
1 yellow onion, thinly sliced
cayenne pepper, optional
olive oil
1 can vegetarian refried beans or homemade refried beans
1 can vegetarian black beans or homemade black beans
2 tomatoes, thinly sliced
shredded lettuce
homemade guacamole (here’s a great recipe to try)
homemade salsa
tortilla chips

Directions:
Remove stems and gills from mushrooms. You can keep the mushrooms whole or slice thin. Drizzle olive oil over the mushrooms, peppers, and onions and sprinkle lightly with cayenne pepper. Grill, BBQ or saute vegetables until cooked through. Serve with warmed beans, lettuce, guacamole, salsa and tortilla chips.
